Vegan Poke Bowl
A vibrant, plant-powered take on the classic poke bowl, naturally packed with protein and the nutritional boost of GoodLeaf Intensely Arugula and Kick’n Mustard Microgreens.

Ingredients

Intensely Arugula
- 1 Pack GoodLeaf Intensely Arugula Microgreens
- 1 Pack GoodLeaf Kick'n Mustard Microgreens
- Seaweed salad, as desired
- 1 Avocado, sliced
- 1/2 Cup Edamame, shelled
- 1/4 Head Purple Cabbage, shredded
- 1 Cup Smoked Tofu
- Pickled Red Onion (garnish)
- Nori sheet, shredded (garnish)
- 1 Radish, thinly sliced
- 1 English Cucumber, sliced
- 1 Carrot, julienned
- Fresh Lime Juice
