Fall Harvest Salad
Served on a bed of our Sweet & Spicy Mix, this Fall Harvest Salad will bring all the flavour to your Thanksgiving table!

Ingredients

DRESSING
· 2 Tsp Dijon Mustard
· 1/2 Cup Olive Oil
· 1/3 Cup Pomegranate Juice
· Salt & Pepper, to taste
SALAD
· 1 Butternut Squash, peeled & cubed
· 1 Tbsp Olive Oil
· Salt & Pepper, to taste
· 3 Packs GoodLeaf Sweet & Spicy Mix
· 1 Cup Feta Cheese
· 1 Cup Pomegranate Seeds
· 1/2 Cup Pumpkin Seeds
· 1 Cup Walnuts
Instructions
Preheat oven to 425° F.
Toss butternut squash in oil, salt pepper and oregano and bake until soft.
Mix together the dressing and set aside.
Add GoodLeaf Sweet & Spicy Mix, cooked butternut squash in a Salad Bowl, and top with remaining ingredients.
Toss with the dressing before serving and enjoy!
