Curried Chicken Salad Sandwhich

A flavourful twist on a classic.

  • 2 Chicken Breasts, cooked & cubed
  • 2 Tbsp Fresh Cilantro, washed & chopped
  • 1/2 Cup Red or Green Grapes, halved
  • 1/4 Red Onion, finely diced
  • 1 Stem Green Onion, sliced
  • 1 Tbsp Yellow Curry Powder
  • 1/2 Cup Plain Greek Yogurt
  • Salt & Pepper, to taste
  • 1 Pack GoodLeaf Kick'n Mustard Microgreens

Instructions

Combine all ingredients, place in fridge and allow to sit for 1 hour.

Assemble between two pieces of your choice of bread, toasted and a handful of GoodLeaf Kick'n Mustard Microgreens.
