One-Pot Lasagna Soup

Made with our locally grown GoodLeaf Sweet Spinach, every bowl of this comforting soup is just as nourishing as it is delicious.

·      1-2 Tbsp Olive Oil

·      1 Lb Ground Beef

·      1 Large Onion, diced

·      4 Cloves Garlic, minced

·      1 x 28 oz. Can Diced Tomatoes

·      3 Tbsp Tomato Paste

·      4 Cups Beef Broth

·      1 Tbsp Italian Seasoning

·      1 Tsp Oregano

·      1 Tsp Salt

·      Pepper to taste

·      1/2 Pack GoodLeaf Sweet Spinach

·      1 Cup Shredded Cheese, of choice

·      1/2 Cup Parmesan

·      5 Strips Lasagna Noodles (not oven ready)

·      1 Cup Ricotta Cheese

SWEET SPINACH

In a large sauce pot or Dutch oven, heat to medium heat. Add olive oil and heat until fragrant.

Add the diced white onion and garlic, saute for 3-4minutes. Add ground beef and mix together. Cook until browned.

Pour in seasonings and tomato paste. Mix well. Stir in the beef broth, diced tomato. Bring to a boil and then reduce to simmer for 10 minutes.

Add lasagna noodles, broken into pieces. Add in GoodLeaf Sweet Spinach, cheese of choice and parmesan. Cook until noodles are soft - add more broth if needed. Serve with a dollop of ricotta and pepper to top.
